This is the fact everything else grows from: much of the Netherlands lies below the level of the sea. Land is reclaimed by walling off water and pumping it out, historically with windmills, and the resulting fields, called polders, sit lower than the waves just beyond the dike. After a catastrophic flood in 1953 killed more than 1,800 people, the Dutch built the Delta Works, a vast chain of storm barriers now counted among the wonders of the modern world. The tulip is not even Dutch. It arrived from the Ottoman Empire and the Dutch fell so hard for it that, in the 1630s, they staged the first speculative bubble in recorded history.
